After 20-odd years behind a bar, I decided a change of scenery was needed, so I saved my tips and headed off to culinary school. After graduating from the Cook Street School of Fine Cooking in Denver, Colorado, I attended the Italian Culinary Insitute for Foreigners in Asti, Italy. The time spent in Italy changed not only the way I cook, but also the way I think of food. The respect for the ingredients, the creativity in preparation and the honest love of food truly inspired me. I try to give that inspiration to my clients in every dish I prepare.
